- 2 Chicken Breast Fillets: boneless and skinless
- 1 cup All-Purpose Flour
- 2 tablespoons Cornstarch
- 2 Eggs: large and beaten
- 1 teaspoon Garlic Powder
- 1 teaspoon Paprika
- 1 teaspoon Salt
- 1 teaspoon Black Pepper
- Vegetable Oil: for frying
- 4 tablespoons Mayonnaise
- 1 cup Iceberg Lettuce: finely shredded
- 2 Sesame Seed Buns
Instructions
- Heat about 1 inch of vegetable oil in a skillet over medium-high heat until it reaches 350°F.
- In one bowl, whisk together flour, cornstarch, garlic powder, paprika, salt, and pepper. In another bowl, beat the eggs.
- Prepare a plate lined with paper towels and keep buns and toppings nearby.
- Dredge each chicken fillet in the flour mix, then dip in egg, then back into flour. Press gently to coat well.
- Fry chicken fillets for 3 to 4 minutes per side, until golden brown and cooked through. Drain on paper towels.
- Lightly toast the buns. Spread mayonnaise on both the top and bottom halves. Layer with lettuce, chicken, then top bun.
- Serve hot with fries or your favorite side.
Notes
- Double dredging adds extra crunch to the chicken.
- Let fried chicken rest a few minutes before assembling to avoid soggy buns.
- Add a dash of hot sauce to the mayo for a spicy version.
