Description

  • 1 3/4 cups (210g) all-purpose flour
  • 1 tablespoon matcha green tea powder
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 3/4 cup (170g) unsalted butter, softened
  • 1 1/4 cups (250g) granulated sugar
  • 3 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1/2 cup (120ml) milk
  • 1/2 cup (120ml) sour cream or plain yogurt
  • For the frosting: 2 cups (480ml) heavy cream or buttercream base
  • 23 tablespoons powdered sugar (if using whipped cream)
  • Optional: Extra matcha powder for dusting

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and line two 8-inch round cake pans.
  2. In a bowl, whisk together the flour, matcha powder, baking powder, and salt. Set aside.
  3. In a large bowl, cream the butter and sugar until light and fluffy.
  4. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
  5. Mix the milk and sour cream together in a separate cup.
  6. Add the dry ingredients to the butter mixture in 3 parts, alternating with the milk mixture. Mix until just combined.
  7. Divide the batter evenly between the prepared pans and smooth the tops.
  8. Bake for 25–30 minutes or until a toothpick inserted in the center comes out clean.
  9. Let cakes cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
  10. Whip the cream with powdered sugar until stiff peaks form, or prepare your frosting of choice.
  11. Layer the cakes with frosting between each layer and on top. Optionally, dust with matcha powder before serving.
