- 3 lbs potatoes, peeled and cubed
- 1/2 cup sour cream
- 1/4 cup butter
- 1/2 cup milk (more if needed)
- 1 1/2 cups shredded cheddar cheese, divided
- 1/4 cup chopped green onions (optional)
- Salt and pepper to taste
- 1/2 cup cooked and crumbled bacon (optional)
- 1/2 cup breadcrumbs or crushed Ritz crackers (optional topping)
- 1 tablespoon melted butter (for topping)
Instructions
- Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
- Boil potatoes in salted water for 15–20 minutes until fork-tender. Drain well.
- Mash the potatoes with butter, sour cream, and milk until smooth. Add more milk if needed for creaminess.
- Stir in 1 cup cheddar cheese, salt, pepper, and green onions if using.
- Spoon the mashed potato mixture into the prepared baking dish and spread evenly.
- Top with the remaining 1/2 cup cheese and bacon if using.
- In a small bowl, mix breadcrumbs or crushed crackers with melted butter, then sprinkle over the top.
- Bake for 20–25 minutes until golden and bubbly. Let rest a few minutes before serving.
Notes
- Make ahead and refrigerate—just add 10 extra minutes to baking time.
- Use cream cheese instead of sour cream for a richer taste.
- For a vegetarian version, omit the bacon and use a crunchy breadcrumb topping.
