- 1.5 pounds sirloin steak, cut into bite-sized pieces
- 1 teaspoon salt
- 1 teaspoon black pepper
- 2 tablespoons olive oil
- 2 tablespoons butter
- 4 cloves garlic, minced
- ½ teaspoon crushed red pepper flakes (optional)
- ¾ cup chicken broth
- ¾ cup heavy cream
- ½ cup sun-dried tomatoes, chopped
- ½ cup grated parmesan cheese
- 1 teaspoon Italian seasoning
- Fresh basil leaves, chopped (for garnish)
Instructions
- Heat a cast iron skillet over medium-high heat until hot.
- Toss steak pieces with salt and pepper in a bowl.
- Add olive oil to skillet and sear steak in batches for 1–2 minutes per side. Remove and set aside.
- Reduce heat to medium. Add butter, garlic, and red pepper flakes. Sauté for 30 seconds.
- Pour in chicken broth, scraping up browned bits. Stir in cream, sun-dried tomatoes, parmesan, and Italian seasoning.
- Simmer sauce until smooth. Return steak to pan and toss to coat. Simmer 2–3 more minutes.
- Garnish with chopped basil and serve immediately.
Notes
- Don’t overcrowd the skillet when searing.
- Add cream or broth if sauce thickens too much during reheating.
- Serve over mashed potatoes, pasta, or crusty bread.
