Description
Tender chicken breasts are seared until golden, then finished in a creamy Parmesan and sun-dried tomato sauce with garlic, thyme, and basil. It is rich, cozy, and perfect for serving with pasta, rice, mashed potatoes, or crusty bread.

- 4 boneless, skinless chicken breasts, about 1 1/2 to 2 pounds, pounded lightly to even thickness
- 2 tablespoons olive oil
- 1 tablespoon sun-dried tomato oil, from the jar
- 1 teaspoon kosher salt, plus more to taste
- 1/2 teaspoon black pepper, plus more to taste
- 3 cloves garlic, finely minced
- 1 tablespoon chopped fresh thyme, or 1 teaspoon dried thyme
- 1/4 teaspoon red pepper flakes
- 3/4 cup low-sodium chicken broth
- 1/2 cup sun-dried tomatoes, drained and chopped
- 1/2 cup heavy cream
- 1/4 cup finely grated Parmesan cheese, plus more for serving if desired
- 2 tablespoons chopped fresh basil, plus more for garnish
Instructions
- Preheat the oven to 375°F. Pat the chicken dry and season both sides with the kosher salt and black pepper.
- Heat the olive oil in a large oven-safe skillet over medium-high heat. Add the chicken and sear for 4 to 5 minutes per side until golden brown. Transfer the chicken to a plate.
- Reduce the heat to medium. Add the sun-dried tomato oil, then stir in the garlic, thyme, and red pepper flakes. Cook for about 30 seconds until fragrant.
- Pour in the chicken broth and scrape up any browned bits from the bottom of the skillet. Stir in the sun-dried tomatoes, heavy cream, and Parmesan cheese. Bring to a gentle simmer.
- Return the chicken and any juices to the skillet. Spoon some sauce over the top.
- Transfer the skillet to the oven and bake for 10 to 15 minutes, or until the chicken reaches 165°F in the thickest part.
- Remove from the oven, sprinkle with chopped basil, let rest for 2 to 3 minutes, then serve warm with extra Parmesan and basil if desired.
Notes
- Serve with angel hair pasta, mashed potatoes, rice, or crusty bread for soaking up the sauce.
- Freshly grated Parmesan melts more smoothly than pre-shredded cheese.
- If the sauce thickens too much during reheating, loosen it with a splash of broth or water.
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
