Description

A refreshing blend of cucumbers, tomatoes, and red onions marinated in a tangy-sweet vinegar dressing with herbs. This easy, no-cook dish is perfect for picnics, BBQs, or everyday sides.


Ingredients

  • 2 medium cucumbers, thinly sliced
  • 3 ripe tomatoes, cut into wedges or thick slices
  • 1 large red onion, thinly sliced
  • 1/2 cup white vinegar
  • 1/4 cup water
  • 2 tablespoons olive oil
  • 1 tablespoon granulated sugar
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon fresh dill, chopped

Instructions

  1. In a large bowl, mix together vinegar, water, olive oil, sugar, salt, and pepper until sugar dissolves.
  2. Add sliced cucumbers, tomatoes, and red onions to the bowl.
  3. Gently toss to coat all vegetables in the marinade.
  4. Transfer mixture to a shallow dish or container with a lid.
  5. Refrigerate for at least 2 hours, ideally overnight, to let the flavors develop.
  6. Before serving, sprinkle with fresh chopped dill and give it one last stir.
  7. Serve chilled and enjoy.

Notes

  • For best results, use ripe tomatoes and fresh herbs.
