A juicy and satisfying low-carb burger made with crispy carrot ‘buns’ and flavorful smash patties, perfect for a lighter take on a comfort food classic.

- 4 large carrots, shredded
- 2 large eggs
- 3 tablespoons almond flour
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 pound ground beef
- 1 teaspoon garlic powder
- 4 slices cheddar cheese
- 4 lettuce leaves
- 4 thick tomato slices
- 1 avocado (optional), sliced
Instructions
- Heat a skillet over medium-high heat. Preheat oven to 350°F if baking carrot buns.
- In a bowl, mix shredded carrots, eggs, almond flour, salt, and pepper. In a separate bowl, season ground beef with garlic powder, salt, and pepper, then form into 4 balls.
- Grease skillet or line a baking sheet with parchment if baking. Shape carrot mixture into small flat rounds.
- Smash beef balls on the skillet using a spatula. Cook until edges are crispy, about 2–3 minutes per side.
- Cook carrot buns 3–4 minutes per side until golden or bake 15–20 minutes, flipping halfway.
- Add cheese to patties during last minute of cooking. Let carrot buns cool slightly before assembling.
- Assemble burgers with carrot buns, patties, lettuce, tomato, and optional avocado. Top with second carrot bun and serve hot.

- Squeeze excess moisture from carrots before cooking for firmer buns.
