Description

A juicy and satisfying low-carb burger made with crispy carrot ‘buns’ and flavorful smash patties, perfect for a lighter take on a comfort food classic.


Ingredients

  • 4 large carrots, shredded
  • 2 large eggs
  • 3 tablespoons almond flour
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 pound ground beef
  • 1 teaspoon garlic powder
  • 4 slices cheddar cheese
  • 4 lettuce leaves
  • 4 thick tomato slices
  • 1 avocado (optional), sliced

Instructions

  1. Heat a skillet over medium-high heat. Preheat oven to 350°F if baking carrot buns.
  2. In a bowl, mix shredded carrots, eggs, almond flour, salt, and pepper. In a separate bowl, season ground beef with garlic powder, salt, and pepper, then form into 4 balls.
  3. Grease skillet or line a baking sheet with parchment if baking. Shape carrot mixture into small flat rounds.
  4. Smash beef balls on the skillet using a spatula. Cook until edges are crispy, about 2–3 minutes per side.
  5. Cook carrot buns 3–4 minutes per side until golden or bake 15–20 minutes, flipping halfway.
  6. Add cheese to patties during last minute of cooking. Let carrot buns cool slightly before assembling.
  7. Assemble burgers with carrot buns, patties, lettuce, tomato, and optional avocado. Top with second carrot bun and serve hot.
