- 8 oz cream cheese
- 1 ½ cups shredded cheddar cheese
- 4 cups chicken broth
- ½ cup chopped green onions
- 3 cloves minced garlic
- 1 cup diced carrots
- 1 tsp dried dill
- 1 tsp dried parsley
- ½ tsp black pepper
- ¾ tsp salt
Instructions
- Place a large pot or Dutch oven over medium heat.
- Add chicken broth, cream cheese, garlic, carrots, dill, parsley, salt, and pepper. Stir occasionally until the cream cheese melts completely.
- Simmer for 10–12 minutes to soften the carrots.
- Add shredded chicken, cheddar cheese, and green onions. Stir until the cheese melts.
- Simmer for another 10 minutes, stirring occasionally.
- Remove from heat and let the soup rest for 5 minutes to thicken.
- Serve hot, garnished with extra green onions or cheese if desired.
