Ingredients

  • 3 cups shredded cooked chicken
  • 8 oz cream cheese
  • 1 ½ cups shredded cheddar cheese
  • 4 cups chicken broth
  • ½ cup chopped green onions
  • 3 cloves minced garlic
  • 1 cup diced carrots
  • 1 tsp dried dill
  • 1 tsp dried parsley
  • ½ tsp black pepper
  • ¾ tsp salt

Instructions

  1. Place a large pot or Dutch oven over medium heat.
  2. Add chicken broth, cream cheese, garlic, carrots, dill, parsley, salt, and pepper. Stir occasionally until the cream cheese melts completely.
  3. Simmer for 10–12 minutes to soften the carrots.
  4. Add shredded chicken, cheddar cheese, and green onions. Stir until the cheese melts.
  5. Simmer for another 10 minutes, stirring occasionally.
  6. Remove from heat and let the soup rest for 5 minutes to thicken.
  7. Serve hot, garnished with extra green onions or cheese if desired.
