A lighter twist on the beloved Marry Me Chicken, this version features juicy chicken cutlets simmered in a creamy Parmesan and sun-dried tomato sauce that’s rich in flavor but easier on the calories.

- 4 chicken cutlets
- 1/3 cup sun-dried tomatoes, finely chopped
- 3 garlic cloves, minced
- 1/3 cup grated Parmesan cheese
- 1/2 cup heavy cream
- 1/2 cup chicken broth
- 2 tablespoons olive oil
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Handful of fresh basil, chopped
Instructions
- Heat 1 tablespoon olive oil in a large skillet over medium heat.
- Season chicken cutlets with salt and pepper.
- Sear chicken for 3–4 minutes per side until golden. Remove and set aside.
- In the same skillet, add remaining olive oil and minced garlic. Sauté until fragrant.
- Stir in chopped sun-dried tomatoes and cook for a minute.
- In a bowl, whisk together cream, chicken broth, Parmesan, and Italian seasoning.
- Pour sauce mixture into the skillet. Simmer for 3–5 minutes, stirring until slightly thickened.
- Return chicken to the skillet and simmer for another 5 minutes, spooning sauce over the top.
- Sprinkle fresh basil over the dish before serving.
Notes
- Pound chicken cutlets evenly for best cooking results.
- Don’t boil the cream to prevent splitting.
- For extra flavor, finish with a squeeze of lemon juice or pinch of chili flakes.
