Description
Lemon Posset is a creamy, indulgent dessert made with just three simple ingredients — heavy cream, sugar, and fresh lemon juice — resulting in a smooth, tangy custard-like treat that’s rich and refreshing.
Ingredients
Scale
- 2 cups heavy cream
- 3/4 cup granulated sugar
- 2 tablespoons fresh lemon juice
- Zest of 1 lemon (optional, for garnish)
- Fresh berries (optional, for garnish)
Instructions
- In a medium saucepan, heat the heavy cream and sugar over medium heat. Stir occasionally until the sugar is completely dissolved and the mixture begins to simmer. Do not let it boil.
- Once simmering, remove from the heat and stir in the fresh lemon juice. Continue stirring until the mixture thickens slightly, about 2 minutes.
- Pour the mixture into individual serving cups or glasses and let cool to room temperature.
- Refrigerate for at least 3 hours, or until the posset has set and is firm to the touch.
- Before serving, garnish with fresh lemon zest and berries, if desired.
Notes
- The key to a successful posset is to use the right ratio of cream, sugar, and lemon juice. If you want a stronger lemon flavor, you can increase the amount of lemon juice slightly.
- Posset can be made ahead of time and stored in the fridge for up to 2 days.
- If you prefer a more substantial texture, you can add a small amount of gelatin to the cream mixture, though it’s not traditional.
