Description

Ingredients

Instructions

  1. In a small saucepan, combine the chopped rhubarb, 1 tablespoon maple syrup, and a splash of water. Cook over medium heat for 5–7 minutes until the rhubarb softens and breaks down. Set aside.
  2. In another pot, bring milk to a gentle simmer. Stir in oats, cinnamon, salt, and vanilla. Reduce heat and cook for about 5 minutes, stirring often, until creamy.
  3. Stir in the cooked rhubarb and remaining tablespoon of maple syrup. Mix until well combined and heated through.
  4. Spoon into bowls and top with desired toppings such as nuts, a dollop of Greek yogurt, or an extra drizzle of maple syrup.
