Description

Lemon Lush is a light and creamy layered dessert made with a buttery pecan crust, a sweetened cream cheese layer, tangy lemon pudding, and fluffy whipped topping. It’s a refreshing no-fuss treat perfect for spring and summer gatherings.

  • For the crust:
  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter, melted
  • 1/2 cup chopped pecans
  • For the cream cheese layer:
  • 8 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 cup whipped topping (like Cool Whip)
  • For the lemon layer:
  • 2 (3.4 oz) packages instant lemon pudding mix
  • 2 3/4 cups cold milk
  • For the topping:
  • 2 cups whipped topping
  • Lemon zest or slices for garnish (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Mix flour, melted butter, and chopped pecans in a bowl. Press into the bottom of a 9×13-inch baking dish.
  2. Bake for 15–18 minutes, until lightly golden. Cool completely.
  3. In a bowl, beat cream cheese and powdered sugar until smooth. Fold in 1 cup of whipped topping. Spread over cooled crust.
  4. In another bowl, whisk together lemon pudding mix and cold milk for about 2 minutes, until thickened. Spread over the cream cheese layer.
  5. Top with remaining whipped topping and smooth the surface. Garnish with lemon zest or slices if desired.
  6. Chill in the refrigerator for at least 2 hours before serving.

Notes

  • Make sure each layer is completely cooled or set before adding the next to keep clean layers.
  • Use homemade whipped cream if preferred, but stabilize it with a bit of powdered sugar.
  • Try substituting the lemon pudding with other flavors like pistachio or chocolate for variation.
