- For the crust:
- 1 cup all-purpose flour
- 1/2 cup unsalted butter, melted
- 1/2 cup chopped pecans
- For the cream cheese layer:
- 8 oz cream cheese, softened
- 1 cup powdered sugar
- 1 cup whipped topping (like Cool Whip)
- For the lemon layer:
- 2 (3.4 oz) packages instant lemon pudding mix
- 2 3/4 cups cold milk
- For the topping:
- 2 cups whipped topping
- Lemon zest or slices for garnish (optional)
Instructions
- Preheat oven to 350°F (175°C). Mix flour, melted butter, and chopped pecans in a bowl. Press into the bottom of a 9×13-inch baking dish.
- Bake for 15–18 minutes, until lightly golden. Cool completely.
- In a bowl, beat cream cheese and powdered sugar until smooth. Fold in 1 cup of whipped topping. Spread over cooled crust.
- In another bowl, whisk together lemon pudding mix and cold milk for about 2 minutes, until thickened. Spread over the cream cheese layer.
- Top with remaining whipped topping and smooth the surface. Garnish with lemon zest or slices if desired.
- Chill in the refrigerator for at least 2 hours before serving.
Notes
- Make sure each layer is completely cooled or set before adding the next to keep clean layers.
- Use homemade whipped cream if preferred, but stabilize it with a bit of powdered sugar.
- Try substituting the lemon pudding with other flavors like pistachio or chocolate for variation.
