- 2 boneless, skinless chicken breasts
- 2 tablespoons olive oil (divided)
- Juice and zest of 1 lemon
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1/2 teaspoon dried thyme
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 pieces flatbread (store-bought or homemade)
- 1/2 cup cherry tomatoes, halved
- 1/4 cup red onion, thinly sliced
- 1/4 cup cucumber, thinly sliced
- 1/4 cup feta cheese, crumbled
- Fresh parsley, for garnish
- 1/2 cup Greek yogurt
- 1/4 cup cucumber, finely grated and drained
- 1 clove garlic, minced
- 1 teaspoon lemon juice
- 1 tablespoon fresh dill, chopped
- Pinch of salt and pepper
Instructions
- In a bowl, combine 1 tablespoon olive oil, lemon juice, lemon zest, garlic, oregano, thyme, salt, and pepper. Add chicken breasts and marinate for at least 30 minutes.
- Heat a grill pan or skillet over medium-high heat. Cook chicken 5–6 minutes per side until fully cooked. Let rest for 5 minutes, then slice thinly.
- In a small bowl, mix Greek yogurt, grated cucumber, garlic, lemon juice, dill, salt, and pepper to make tzatziki.
- Warm flatbread in the oven or skillet until slightly crisp.
- Top flatbread with sliced chicken, cherry tomatoes, red onion, cucumber, and feta cheese.
- Drizzle generously with tzatziki and garnish with fresh parsley.
- Serve immediately.
