- 4 salmon fillets (about 150 grams each)
- 3 tablespoons unsalted butter
- 4 garlic cloves, minced
- 2 tablespoons fresh parsley, chopped
- 1 whole lemon (sliced and juiced)
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 250 grams asparagus, trimmed
Instructions
- Preheat your oven to 200°C and line a baking sheet.
- Mix melted butter with minced garlic and a bit of parsley in a small bowl.
- Heat olive oil in a skillet over medium heat until shimmering.
- Season salmon with salt and pepper, then place in the skillet skin side down. Arrange asparagus on the baking sheet with a drizzle of oil and seasoning.
- Sear salmon for 4 to 5 minutes, flip gently, then brush with garlic butter. Transfer asparagus to the oven and roast for 12 minutes. Finish salmon with a squeeze of lemon juice.
- Sprinkle fresh parsley and add lemon slices over the salmon.
- Plate the salmon with roasted asparagus and spoon extra butter sauce over the top. Serve and enjoy.
