Description

A rich and flavorful salmon dinner with garlic butter, fresh lemon, and roasted asparagus, perfect for a quick yet elegant meal.


Ingredients

  • 4 salmon fillets (about 150 grams each)
  • 3 tablespoons unsalted butter
  • 4 garlic cloves, minced
  • 2 tablespoons fresh parsley, chopped
  • 1 whole lemon (sliced and juiced)
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 250 grams asparagus, trimmed

Instructions

  1. Preheat your oven to 200°C and line a baking sheet.
  2. Mix melted butter with minced garlic and a bit of parsley in a small bowl.
  3. Heat olive oil in a skillet over medium heat until shimmering.
  4. Season salmon with salt and pepper, then place in the skillet skin side down. Arrange asparagus on the baking sheet with a drizzle of oil and seasoning.
  5. Sear salmon for 4 to 5 minutes, flip gently, then brush with garlic butter. Transfer asparagus to the oven and roast for 12 minutes. Finish salmon with a squeeze of lemon juice.
  6. Sprinkle fresh parsley and add lemon slices over the salmon.
  7. Plate the salmon with roasted asparagus and spoon extra butter sauce over the top. Serve and enjoy.
