Zesty and refreshing, these Lemon & Coriander Tofu Skewers are a perfect plant-based option for grilling or baking. Packed with citrusy flavors and fresh herbs, they make a great appetizer or light meal.

- 400g firm tofu, drained and cubed
- 2 tbsp olive oil
- 2 tbsp lemon juice
- 1 tsp lemon zest
- 2 garlic cloves, minced
- 2 tbsp fresh coriander (cilantro), finely chopped
- 1 tsp ground cumin
- 1/2 tsp paprika
- Salt and pepper to taste
- Wooden or metal skewers
Instructions
- Press the tofu for at least 15 minutes to remove excess moisture, then cut into bite-sized cubes.
- In a bowl, mix olive oil, lemon juice, lemon zest, minced garlic, chopped coriander, cumin, paprika, salt, and pepper to create the marinade.
- Add tofu cubes to the marinade and gently toss to coat. Let marinate for at least 30 minutes (or up to 2 hours in the fridge).
- Thread the marinated tofu onto skewers.
- Grill on a preheated grill or bake at 200°C (390°F) for 15–20 minutes, turning halfway, until golden and slightly crispy.
- Garnish with extra coriander and lemon slices if desired, and serve warm.
Notes
- Soak wooden skewers in water for 30 minutes before grilling to prevent burning.
- Add vegetables like bell peppers, zucchini, or red onions to the skewers for variety.
- Serve with a yogurt dip or over rice/quinoa for a fuller meal.
