Description

Zesty and refreshing, these Lemon & Coriander Tofu Skewers are a perfect plant-based option for grilling or baking. Packed with citrusy flavors and fresh herbs, they make a great appetizer or light meal.


Ingredients

  • 400g firm tofu, drained and cubed
  • 2 tbsp olive oil
  • 2 tbsp lemon juice
  • 1 tsp lemon zest
  • 2 garlic cloves, minced
  • 2 tbsp fresh coriander (cilantro), finely chopped
  • 1 tsp ground cumin
  • 1/2 tsp paprika
  • Salt and pepper to taste
  • Wooden or metal skewers

Instructions

  1. Press the tofu for at least 15 minutes to remove excess moisture, then cut into bite-sized cubes.
  2. In a bowl, mix olive oil, lemon juice, lemon zest, minced garlic, chopped coriander, cumin, paprika, salt, and pepper to create the marinade.
  3. Add tofu cubes to the marinade and gently toss to coat. Let marinate for at least 30 minutes (or up to 2 hours in the fridge).
  4. Thread the marinated tofu onto skewers.
  5. Grill on a preheated grill or bake at 200°C (390°F) for 15–20 minutes, turning halfway, until golden and slightly crispy.
  6. Garnish with extra coriander and lemon slices if desired, and serve warm.

Notes

  • Soak wooden skewers in water for 30 minutes before grilling to prevent burning.
  • Add vegetables like bell peppers, zucchini, or red onions to the skewers for variety.
  • Serve with a yogurt dip or over rice/quinoa for a fuller meal.
