Description

A cozy, hearty soup that transforms classic lasagna into a gluten free, one-pot comfort dish. Loaded with savory meat, gluten free noodles, and a rich tomato broth topped with creamy ricotta and mozzarella.


Ingredients

  • 2 tablespoons olive oil
  • 1 pound ground beef or turkey
  • 1 medium onion, diced
  • 4 garlic cloves, minced
  • 28-ounce can crushed tomatoes
  • 2 tablespoons tomato paste
  • 2 teaspoons Italian seasoning
  • 1/4 teaspoon red pepper flakes (optional)
  • 8 ounces gluten free lasagna noodles, broken into pieces
  • 6 cups vegetable or chicken broth
  • Salt and pepper, to taste
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • Fresh basil or parsley, for garnish

Instructions

  1. Set a large soup pot over medium heat and add the olive oil.
  2. Brown the ground beef or turkey, breaking it apart as it cooks. Add the diced onion and garlic, sautéing until soft and fragrant.
  3. Stir in tomato paste, crushed tomatoes, Italian seasoning, and red pepper flakes. Let simmer for 2 minutes.
  4. Pour in broth and bring to a boil. Add the broken gluten free noodles.
  5. Reduce heat and simmer uncovered for 15–20 minutes until noodles are tender.
  6. Season with salt and pepper to taste. Ladle into bowls and top with ricotta, mozzarella, and fresh herbs.

Notes

  • Don’t overcook the noodles to avoid mushiness.
  • For a dairy-free version, use vegan cheese alternatives.
  • Soup base can be made ahead and stored without noodles.
