- 1 pound ground beef or turkey
- 1 medium onion, diced
- 4 garlic cloves, minced
- 28-ounce can crushed tomatoes
- 2 tablespoons tomato paste
- 2 teaspoons Italian seasoning
- 1/4 teaspoon red pepper flakes (optional)
- 8 ounces gluten free lasagna noodles, broken into pieces
- 6 cups vegetable or chicken broth
- Salt and pepper, to taste
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- Fresh basil or parsley, for garnish
Instructions
- Set a large soup pot over medium heat and add the olive oil.
- Brown the ground beef or turkey, breaking it apart as it cooks. Add the diced onion and garlic, sautéing until soft and fragrant.
- Stir in tomato paste, crushed tomatoes, Italian seasoning, and red pepper flakes. Let simmer for 2 minutes.
- Pour in broth and bring to a boil. Add the broken gluten free noodles.
- Reduce heat and simmer uncovered for 15–20 minutes until noodles are tender.
- Season with salt and pepper to taste. Ladle into bowls and top with ricotta, mozzarella, and fresh herbs.
