Description

Bright and buttery lemon bars with a tender shortbread crust and a smooth, tangy lemon filling, finished with a light dusting of powdered sugar.


Ingredients

  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup powdered sugar, plus extra for dusting
  • 1/2 cup unsalted butter, melted
  • 3 medium fresh lemons, juiced and zested
  • 3 large eggs
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 350 degrees Fahrenheit and line an 8 by 8 inch baking pan with parchment paper.
  2. In a bowl, mix the flour, powdered sugar, and salt, then stir in the melted butter until a soft dough forms.
  3. Press the dough evenly into the prepared pan to form the crust.
  4. Bake the crust for 18 to 20 minutes until lightly golden.
  5. While the crust bakes, whisk the eggs, granulated sugar, lemon juice, and lemon zest until smooth.
  6. Pour the lemon mixture over the hot crust and return the pan to the oven.
  7. Bake for 20 to 22 minutes until the filling is set in the center.
  8. Remove from the oven and let cool completely, then dust with powdered sugar, slice, and serve.

Notes

  • For clean slices, chill the bars before cutting.
  • Fresh lemon juice gives the best flavor.
  • Store leftovers in the refrigerator for up to four days.
