- 1 cup all-purpose flour
- 1 cup granulated sugar
- 1/2 cup powdered sugar, plus extra for dusting
- 1/2 cup unsalted butter, melted
- 3 medium fresh lemons, juiced and zested
- 3 large eggs
- 1/4 teaspoon salt
Instructions
- Preheat the oven to 350 degrees Fahrenheit and line an 8 by 8 inch baking pan with parchment paper.
- In a bowl, mix the flour, powdered sugar, and salt, then stir in the melted butter until a soft dough forms.
- Press the dough evenly into the prepared pan to form the crust.
- Bake the crust for 18 to 20 minutes until lightly golden.
- While the crust bakes, whisk the eggs, granulated sugar, lemon juice, and lemon zest until smooth.
- Pour the lemon mixture over the hot crust and return the pan to the oven.
- Bake for 20 to 22 minutes until the filling is set in the center.
- Remove from the oven and let cool completely, then dust with powdered sugar, slice, and serve.
Notes
- For clean slices, chill the bars before cutting.
- Fresh lemon juice gives the best flavor.
- Store leftovers in the refrigerator for up to four days.
