Lazy Day Lemon Cream Pie Bars are the perfect blend of zesty lemon flavor and creamy filling on a buttery crust. Made with minimal effort, they’re ideal for summer picnics, potlucks, or an easy weeknight dessert.

- 1 box yellow cake mix
- 1/3 cup butter, melted
- 1 egg
- 1 can (14 oz) sweetened condensed milk
- 1/2 cup lemon juice (fresh or bottled)
- 1 tablespoon lemon zest (optional)
- 1 egg yolk
- Powdered sugar for dusting (optional)
Instructions
- Preheat oven to 350°F (175°C). Grease or line an 8×8-inch baking pan with parchment paper.
- In a bowl, combine cake mix, melted butter, and 1 egg. Mix until crumbly and press 2/3 of the mixture into the bottom of the prepared pan to form a crust.
- In another bowl, whisk together sweetened condensed milk, lemon juice, lemon zest, and egg yolk until smooth.
- Pour the lemon cream mixture over the crust and spread evenly.
- Sprinkle the remaining cake mixture over the top.
- Bake for 25–30 minutes, or until the top is lightly golden and the filling is set.
- Cool completely, then refrigerate for at least 1 hour before cutting into bars.
- Dust with powdered sugar before serving, if desired.
Notes
- Use fresh lemon juice and zest for the best flavor.
- Store leftovers in the refrigerator for up to 4 days.
- You can double the recipe for a 9×13-inch pan.
