  • 1 pound lean ground beef
  • 1 cup long grain white rice, uncooked
  • 1 cup fresh diced tomatoes
  • 1 medium green bell pepper, chopped
  • 1 cup sweet corn kernels
  • 1 cup shredded cheddar cheese
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 2 cups beef broth
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika

Instructions

  1. Heat a large skillet over medium heat.
  2. Add olive oil, then sauté the chopped onion and minced garlic until fragrant and translucent.
  3. Add the ground beef and cook until browned, breaking it up with a spoon. Season with salt, black pepper, and paprika.
  4. Stir in the chopped green bell pepper, sweet corn, diced tomatoes, uncooked rice, and beef broth. Mix well to combine.
  5. Bring the mixture to a gentle simmer, then cover with a lid. Reduce heat to low and cook for 18 to 20 minutes, or until the rice is tender and liquid is absorbed.
  6. Sprinkle shredded cheddar cheese evenly over the top. Cover again and cook for 2 to 3 minutes until the cheese is melted.
  7. Remove from heat, let rest for 5 minutes, fluff gently with a fork, and serve warm.

  • Let the skillet rest before serving so the rice fully absorbs remaining moisture.
