- 1 cup long grain white rice, uncooked
- 1 cup fresh diced tomatoes
- 1 medium green bell pepper, chopped
- 1 cup sweet corn kernels
- 1 cup shredded cheddar cheese
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 2 cups beef broth
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon paprika
Instructions
- Heat a large skillet over medium heat.
- Add olive oil, then sauté the chopped onion and minced garlic until fragrant and translucent.
- Add the ground beef and cook until browned, breaking it up with a spoon. Season with salt, black pepper, and paprika.
- Stir in the chopped green bell pepper, sweet corn, diced tomatoes, uncooked rice, and beef broth. Mix well to combine.
- Bring the mixture to a gentle simmer, then cover with a lid. Reduce heat to low and cook for 18 to 20 minutes, or until the rice is tender and liquid is absorbed.
- Sprinkle shredded cheddar cheese evenly over the top. Cover again and cook for 2 to 3 minutes until the cheese is melted.
- Remove from heat, let rest for 5 minutes, fluff gently with a fork, and serve warm.

- Let the skillet rest before serving so the rice fully absorbs remaining moisture.
