- 14 ounces kielbasa sausage, sliced into 1 inch pieces
- 2 pounds russet potatoes, peeled and diced into 1 inch cubes
- 12 ounces fresh green beans, trimmed
- 1 medium yellow onion, diced
- 3 cloves garlic, minced
- 1 ½ cups shredded cheddar cheese
- 1 cup chicken broth
- 1 cup heavy cream
- 1 tablespoon olive oil
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon dried thyme
Instructions
- Preheat oven to 375 degrees Fahrenheit.
- In a large mixing bowl, combine diced potatoes, sliced kielbasa, green beans, diced onion, and minced garlic. Drizzle with olive oil and toss to coat evenly.
- Lightly grease a 9×13 inch baking dish.
- Transfer the mixture into the prepared baking dish and spread evenly.
- In a separate bowl, whisk together chicken broth, heavy cream, salt, black pepper, and dried thyme. Pour evenly over the ingredients in the baking dish.
- Sprinkle shredded cheddar cheese evenly over the top.
- Cover with foil and bake for 40 minutes. Remove foil and bake for an additional 15 minutes, until potatoes are tender and the top is golden.
- Let rest for 5 to 10 minutes before serving.
Notes
- For deeper flavor, lightly brown the kielbasa in a skillet before assembling.
- Allow the casserole to rest after baking so the sauce thickens slightly.
- Freshly grated cheese melts more smoothly than pre-shredded varieties.
