Description

A hearty and comforting casserole made with smoky kielbasa, tender potatoes, crisp green beans, and a creamy savory sauce, all baked together under a golden layer of melted cheddar cheese.

  • 14 ounces kielbasa sausage, sliced into 1 inch pieces
  • 2 pounds russet potatoes, peeled and diced into 1 inch cubes
  • 12 ounces fresh green beans, trimmed
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 1 ½ cups shredded cheddar cheese
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon dried thyme

Instructions

  1. Preheat oven to 375 degrees Fahrenheit.
  2. In a large mixing bowl, combine diced potatoes, sliced kielbasa, green beans, diced onion, and minced garlic. Drizzle with olive oil and toss to coat evenly.
  3. Lightly grease a 9×13 inch baking dish.
  4. Transfer the mixture into the prepared baking dish and spread evenly.
  5. In a separate bowl, whisk together chicken broth, heavy cream, salt, black pepper, and dried thyme. Pour evenly over the ingredients in the baking dish.
  6. Sprinkle shredded cheddar cheese evenly over the top.
  7. Cover with foil and bake for 40 minutes. Remove foil and bake for an additional 15 minutes, until potatoes are tender and the top is golden.
  8. Let rest for 5 to 10 minutes before serving.

  • For deeper flavor, lightly brown the kielbasa in a skillet before assembling.
