Description

A homemade version of KFC-style chicken baked in the oven—crispy on the outside, tender and juicy on the inside, with a perfectly seasoned coating.


Ingredients

  • 8 pieces of chicken (drumsticks, thighs, or breasts)
  • 2 cups buttermilk
  • 2 cups all-purpose flour
  • 2 teaspoons paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • 1/2 teaspoon oregano
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon cayenne pepper (optional, for heat)
  • Cooking spray or olive oil spray

Instructions

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper or a wire rack and lightly grease with cooking spray.
  2. Marinate the chicken pieces in buttermilk for at least 2 hours or overnight in the refrigerator.
  3. In a large bowl, mix the flour with all the spices and herbs.
  4. Remove chicken from buttermilk, letting excess drip off. Dredge each piece thoroughly in the seasoned flour mixture, pressing to adhere.
  5. Place the coated chicken on the prepared baking sheet. Spray generously with cooking spray or lightly drizzle with oil.
  6. Bake for 40–45 minutes, flipping once halfway through, until the chicken is golden and cooked through (internal temperature should be 165°F or 74°C).
  7. Let rest for a few minutes before serving.

Notes

  • Using a wire rack helps the heat circulate for a crispier texture.
  • For extra crispiness, double-dip in buttermilk and flour.
  • You can adjust the spice level by increasing or decreasing cayenne pepper.
