Description
A homemade version of KFC-style chicken baked in the oven—crispy on the outside, tender and juicy on the inside, with a perfectly seasoned coating.

- 8 pieces of chicken (drumsticks, thighs, or breasts)
- 2 cups buttermilk
- 2 cups all-purpose flour
- 2 teaspoons paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried thyme
- 1 teaspoon dried basil
- 1/2 teaspoon oregano
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon cayenne pepper (optional, for heat)
- Cooking spray or olive oil spray
Instructions
- Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper or a wire rack and lightly grease with cooking spray.
- Marinate the chicken pieces in buttermilk for at least 2 hours or overnight in the refrigerator.
- In a large bowl, mix the flour with all the spices and herbs.
- Remove chicken from buttermilk, letting excess drip off. Dredge each piece thoroughly in the seasoned flour mixture, pressing to adhere.
- Place the coated chicken on the prepared baking sheet. Spray generously with cooking spray or lightly drizzle with oil.
- Bake for 40–45 minutes, flipping once halfway through, until the chicken is golden and cooked through (internal temperature should be 165°F or 74°C).
- Let rest for a few minutes before serving.
Notes
- Using a wire rack helps the heat circulate for a crispier texture.
- For extra crispiness, double-dip in buttermilk and flour.
- You can adjust the spice level by increasing or decreasing cayenne pepper.
