Description
Kentucky Cream Pull Candy is a traditional Southern treat made from cooked sugar and cream, hand-pulled until it turns glossy and white. It has a melt-in-your-mouth texture and a rich, creamy flavor.
Ingredients
Scale
- 2 cups granulated sugar
- 1/2 cup heavy cream
- 1/2 cup water
- 1/8 teaspoon salt
- 1/4 teaspoon baking soda
- 1/2 teaspoon vanilla extract
- Butter (for greasing hands and surface)
Instructions
- Butter a marble slab or a large cookie sheet and set aside. Also butter your hands and a spatula for later.
- In a heavy saucepan, combine sugar, cream, water, salt, and baking soda. Stir over medium heat until sugar dissolves.
- Bring mixture to a boil without stirring. Cook until it reaches 260°F (hard ball stage) on a candy thermometer.
- Remove from heat and stir in the vanilla extract. Pour the hot mixture onto the prepared surface.
- Let the candy cool just enough to handle (about 5–10 minutes). Begin pulling the candy by hand, stretching and folding repeatedly.
- Continue pulling until the candy turns creamy white and loses its gloss, about 10–15 minutes.
- Quickly stretch into ropes and cut into bite-sized pieces before it hardens.
- Let pieces cool completely and store in an airtight container with parchment between layers.
Notes
- Humidity affects candy setting; make on a dry day for best results.
- Be very cautious when handling hot candy to avoid burns.
- If candy becomes too stiff to pull, briefly warm it in the oven at low temperature.
