- 3 cups all-purpose flour
- 1 cup cold unsalted butter, cubed
- 1 teaspoon ground turmeric
- 1 teaspoon salt
- 1/2 cup ice water
- 1 pound ground beef
- 1 medium onion, finely chopped
- 2 garlic cloves, minced
- 1 scotch bonnet pepper, finely chopped
- 1 teaspoon ground allspice
- 1 tablespoon curry powder
- 1/2 cup breadcrumbs
- 1/2 cup beef broth or water
- 1 egg, beaten
Instructions
- Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
- In a large bowl, combine flour, salt, and turmeric. Cut in the cold butter until crumbly, then add ice water gradually to form a dough. Chill for 30 minutes.
- Heat a skillet over medium heat with oil. Sauté onion, garlic, and scotch bonnet. Add ground beef, then stir in spices, breadcrumbs, and broth. Cook until thickened. Let cool.
- Roll out dough and cut into 6-8 inch circles. Fill one half with beef mixture, brush edges with egg, fold, and seal with a fork.
- Place patties on the baking sheet, brush with egg wash, and bake for 25–30 minutes until golden.
- Cool slightly before serving and enjoy warm.
Notes
- Use gloves when handling scotch bonnet peppers to avoid irritation.
- Chilling the dough is key for a flaky crust.
- For milder heat, use jalapeño instead of scotch bonnet.
