- 1 ½ pounds ground beef
- ½ pound ground pork
- ¾ cup breadcrumbs
- ½ cup milk
- 2 large eggs
- ½ cup grated Parmesan cheese
- 3 cloves garlic, minced
- 1 small yellow onion, finely chopped
- 2 teaspoons Italian seasoning
- 1 ½ teaspoons salt
- 1 teaspoon black pepper
- 2 cups fresh spinach, sautéed
- 1 cup shredded mozzarella cheese
- 1 tablespoon olive oil
- ¼ cup ketchup or marinara sauce
Instructions
- Preheat oven to 375°F (190°C). Line a baking sheet or loaf pan with parchment paper or foil.
- In a large bowl, mix ground beef, ground pork, soaked breadcrumbs, eggs, Parmesan, garlic, onion, Italian seasoning, salt, and pepper until just combined.
- Lay out the meat mixture on the prepared surface, pressing two-thirds into a flat rectangle, leaving room around the edges.
- Layer sautéed spinach and mozzarella cheese over the meat. Cover with the remaining meat mixture and seal the edges well.
- Bake for 50–60 minutes until the internal temperature reaches 160°F (71°C). In the last 10 minutes, brush with ketchup or marinara.
- Let rest for 10–15 minutes before slicing.
- Slice thick and serve with your favorite sides.
Notes
- Don’t overmix the meat mixture to keep it tender.
- Letting the meatloaf rest prevents it from falling apart when sliced.
- Use fresh grated cheese for better melting and flavor.
- Sauté spinach to avoid excess moisture inside the meatloaf.
