- 500 grams ground beef
- 1/2 cup breadcrumbs
- 1 large egg
- 1/3 cup grated parmesan cheese
- 3 garlic cloves, minced
- 2 tablespoons fresh parsley, chopped
- 1 medium onion, finely chopped
- 2 medium carrots, sliced
- 2 stalks celery, sliced
- 800 grams crushed tomatoes
- 2 tablespoons tomato paste
- 2 tablespoons olive oil
- 4 cups beef broth
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt to taste
- Black pepper to taste
Instructions
- Heat a large pot over medium heat.
- In a bowl, combine ground beef, breadcrumbs, egg, parmesan cheese, garlic, parsley, salt, and black pepper. Mix gently until just combined.
- Add olive oil to the pot and sauté onion, carrots, and celery until softened.
- Stir in tomato paste, crushed tomatoes, beef broth, oregano, and basil. Bring to a gentle simmer.
- Form small meatballs and carefully drop them into the simmering soup.
- Cook for about 20 minutes until the meatballs are fully cooked.
- Taste and adjust seasoning if needed.
- Serve warm with a sprinkle of fresh parsley.
Notes
- Do not overmix the meat mixture to keep meatballs tender.
- Simmer gently to avoid breaking the meatballs.
- Add fresh herbs at the end for brighter flavor.
