Description

Ingredients

  • 500 grams ground beef
  • 1/2 cup breadcrumbs
  • 1 large egg
  • 1/3 cup grated parmesan cheese
  • 3 garlic cloves, minced
  • 2 tablespoons fresh parsley, chopped
  • 1 medium onion, finely chopped
  • 2 medium carrots, sliced
  • 2 stalks celery, sliced
  • 800 grams crushed tomatoes
  • 2 tablespoons tomato paste
  • 2 tablespoons olive oil
  • 4 cups beef broth
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Heat a large pot over medium heat.
  2. In a bowl, combine ground beef, breadcrumbs, egg, parmesan cheese, garlic, parsley, salt, and black pepper. Mix gently until just combined.
  3. Add olive oil to the pot and sauté onion, carrots, and celery until softened.
  4. Stir in tomato paste, crushed tomatoes, beef broth, oregano, and basil. Bring to a gentle simmer.
  5. Form small meatballs and carefully drop them into the simmering soup.
  6. Cook for about 20 minutes until the meatballs are fully cooked.
  7. Taste and adjust seasoning if needed.
  8. Serve warm with a sprinkle of fresh parsley.

Notes

  • Do not overmix the meat mixture to keep meatballs tender.
  • Simmer gently to avoid breaking the meatballs.
  • Add fresh herbs at the end for brighter flavor.
