- 1.5 pounds chicken thighs, boneless and skinless
- 1 cup carrots, chopped
- 1 cup celery, chopped
- 1 medium yellow onion, diced
- 3 cloves garlic, minced
- 1 cup frozen peas
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup milk
- 1/4 cup unsalted butter, melted
- 5 cups chicken broth
- 1 teaspoon dried thyme
Instructions
- Set the Instant Pot to sauté mode and heat for 2 minutes.
- Add oil, then sauté onions, garlic, carrots, and celery for 4–5 minutes until softened.
- Stir in chicken thighs, thyme, salt, pepper, and chicken broth. Mix well.
- In a bowl, combine flour, baking powder, and salt. Stir in melted butter and milk until just mixed.
- Drop spoonfuls of dumpling dough on top of the broth.
- Seal lid and pressure cook on High for 10 minutes. Quick release carefully after cooking.
- Stir in peas and let the dish sit for 5–10 minutes to thicken slightly.
- Serve hot and garnish with parsley if desired.
Notes
- Use rotisserie chicken to save time.
- Let dumpling dough rest for a few minutes before dropping for fluffier texture.
- Mash one or two dumplings to naturally thicken the broth if desired.
