Description

Sweet and savory baked salmon glazed with honey and pineapple juice, topped with caramelized pineapple chunks — a tropical twist on a healthy dinner favorite.


Ingredients

  • 4 salmon fillets (about 6 oz each)
  • 1/2 cup pineapple juice
  • 1/4 cup honey
  • 2 tablespoons soy sauce
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 cup pineapple chunks
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Chopped green onions or cilantro (for garnish)

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking dish with foil or parchment.
  2. In a small saucepan over medium heat, combine pineapple juice, honey, soy sauce, and garlic. Simmer for 5–7 minutes until slightly thickened.
  3. Place salmon fillets in the baking dish. Season with salt and pepper.
  4. Pour half of the glaze over the salmon. Arrange pineapple chunks around and on top of the fillets.
  5. Bake for 15–18 minutes, or until salmon flakes easily with a fork.
  6. Brush with remaining glaze before serving. Garnish with green onions or cilantro.

Notes

  • For extra caramelization, broil the salmon for the last 2 minutes.
  • Serve over rice, quinoa, or steamed veggies.
  • Use fresh or canned pineapple based on availability.
