Description
Sweet and savory baked salmon glazed with honey and pineapple juice, topped with caramelized pineapple chunks — a tropical twist on a healthy dinner favorite.

- 4 salmon fillets (about 6 oz each)
- 1/2 cup pineapple juice
- 1/4 cup honey
- 2 tablespoons soy sauce
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 cup pineapple chunks
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Chopped green onions or cilantro (for garnish)
Instructions
- Preheat oven to 400°F (200°C). Line a baking dish with foil or parchment.
- In a small saucepan over medium heat, combine pineapple juice, honey, soy sauce, and garlic. Simmer for 5–7 minutes until slightly thickened.
- Place salmon fillets in the baking dish. Season with salt and pepper.
- Pour half of the glaze over the salmon. Arrange pineapple chunks around and on top of the fillets.
- Bake for 15–18 minutes, or until salmon flakes easily with a fork.
- Brush with remaining glaze before serving. Garnish with green onions or cilantro.
Notes
- For extra caramelization, broil the salmon for the last 2 minutes.
- Serve over rice, quinoa, or steamed veggies.
- Use fresh or canned pineapple based on availability.
