- 1 pound raw shrimp, peeled and deveined
- 1 ½ cups broccoli florets
- 1 large red bell pepper, sliced
- 1 cup snap peas, trimmed
- 3 garlic cloves, minced
- 1 tablespoon fresh ginger, grated
- ⅓ cup honey
- ¼ cup soy sauce
- 2 teaspoons cornstarch
- 2 tablespoons olive oil
- 2 green onions, sliced
- 2 cups cooked white rice
Instructions
- Heat a large skillet or wok over medium-high heat.
- In a bowl, whisk together honey, soy sauce, garlic, ginger, and cornstarch. Set aside.
- Add 1 tablespoon olive oil to the skillet and cook shrimp for 2 minutes per side until pink. Remove and set aside.
- Add remaining oil and stir-fry broccoli, bell pepper, and snap peas for 4–5 minutes until tender-crisp.
- Return shrimp to the pan, pour in the sauce, and toss everything together. Cook for 2 more minutes until the sauce thickens.
- Remove from heat, garnish with green onions, and serve over warm rice.
Notes
- Prep all ingredients before you start cooking for a smooth stir-fry process.
- Don’t overcook the shrimp, they turn rubbery quickly.
- You can add chili flakes or sriracha for a spicier version.
