- 1 pound flank steak
- 2 tablespoons chipotle peppers in adobo sauce, minced
- 2 tablespoons honey
- 3 cloves garlic, minced
- 2 tablespoons lime juice
- 2 tablespoons olive oil
- 1 teaspoon salt
- 2 cups cooked white rice
- 1 cup black beans, drained and rinsed
- 1 cup sweet corn
- 1 avocado, diced
- 1 cup pico de gallo
- 2 tablespoons fresh cilantro, chopped
Instructions
- Preheat your grill or cast iron pan over high heat for 5 minutes.
- In a bowl, combine minced chipotle peppers, honey, garlic, lime juice, olive oil, and salt. Add the steak and marinate for at least 30 minutes.
- Oil your grill grates or pan lightly to prevent sticking.
- While the steak marinates, prepare rice, warm the black beans and corn, dice avocado, and mix pico de gallo.
- Sear the steak for 3–4 minutes per side for medium rare. Let it rest for 10 minutes before slicing against the grain.
