- 4 boneless skinless chicken breasts (about 1 1/2 lb)
- 1/4 cup balsamic vinegar
- 3 tablespoons honey
- 3 tablespoons olive oil
- 3 cloves garlic, minced
- 1 tablespoon Dijon mustard
- 1 teaspoon fine sea salt
- 1/2 teaspoon freshly ground black pepper
- 1 cup couscous (uncooked)
- 1 1/4 cups low sodium chicken broth
- 1 cup cherry tomatoes, halved
- 1 small cucumber, diced
- 1/4 cup red onion, finely chopped
- 1/2 cup feta cheese, crumbled
- 1/4 cup fresh parsley, chopped
Instructions
- Preheat grill or grill pan to medium high heat.
- Whisk balsamic vinegar, honey, olive oil, garlic, Dijon, salt, and pepper. Add chicken, toss to coat, and marinate 30 minutes.
- Bring chicken broth to a boil in a saucepan. Stir in couscous, cover, remove from heat, rest 5 minutes, then fluff with a fork.
- Toss couscous with cherry tomatoes, cucumber, red onion, and parsley. Set aside.
- Grill chicken 6 to 7 minutes per side until an instant read thermometer reads 165°F. Rest 5 minutes, then slice.
- Plate couscous salad, top with sliced chicken, and sprinkle with feta.
- Serve immediately while warm and enjoy.
Notes
- Note: For deeper flavor, marinate the chicken up to 12 hours in the refrigerator.
- Brush chicken with a little extra marinade during the last minute of grilling for a glossy finish. Discard leftover raw marinade.
- Chill the couscous salad before serving for a refreshing contrast on hot days.
- Add fresh mint or dill with the parsley for a bright herbal lift.
