Description

Juicy honey balsamic grilled chicken served over fluffy couscous with crisp veggies and a creamy sprinkle of feta. Sweet, tangy, and savory in perfect harmony.


Ingredients

  • 4 boneless skinless chicken breasts (about 1 1/2 lb)
  • 1/4 cup balsamic vinegar
  • 3 tablespoons honey
  • 3 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 tablespoon Dijon mustard
  • 1 teaspoon fine sea salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 cup couscous (uncooked)
  • 1 1/4 cups low sodium chicken broth
  • 1 cup cherry tomatoes, halved
  • 1 small cucumber, diced
  • 1/4 cup red onion, finely chopped
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup fresh parsley, chopped

Instructions

  1. Preheat grill or grill pan to medium high heat.
  2. Whisk balsamic vinegar, honey, olive oil, garlic, Dijon, salt, and pepper. Add chicken, toss to coat, and marinate 30 minutes.
  3. Bring chicken broth to a boil in a saucepan. Stir in couscous, cover, remove from heat, rest 5 minutes, then fluff with a fork.
  4. Toss couscous with cherry tomatoes, cucumber, red onion, and parsley. Set aside.
  5. Grill chicken 6 to 7 minutes per side until an instant read thermometer reads 165°F. Rest 5 minutes, then slice.
  6. Plate couscous salad, top with sliced chicken, and sprinkle with feta.
  7. Serve immediately while warm and enjoy.

Notes

  • Note: For deeper flavor, marinate the chicken up to 12 hours in the refrigerator.
  • Brush chicken with a little extra marinade during the last minute of grilling for a glossy finish. Discard leftover raw marinade.
  • Chill the couscous salad before serving for a refreshing contrast on hot days.
  • Add fresh mint or dill with the parsley for a bright herbal lift.
