Description

These homemade chicken nuggets are crispy on the outside and tender on the inside. Coated with a mix of Greek yogurt, panko breadcrumbs, and parmesan, they are healthier than traditional fried nuggets and perfect for dipping in honey mustard or sweet chili mayo.


Ingredients

For the chicken nuggets:

  • 4 chicken breasts, skinless and boneless
  • 50 g (2 oz) Greek yoghurt
  • 50 g (2 oz) panko breadcrumbs
  • 30 g (1 oz) grated parmesan
  • 2 tsp paprika
  • 2 tsp garlic powder
  • Salt and pepper, to taste
  • Olive oil, for brushing or frying

For the honey and mustard dip:

  • 75 g (3 oz) Greek yoghurt
  • 3 tsp runny honey
  • 1 tsp wholegrain mustard

For the sweet chilli mayo:

  • 100 g (4 oz) mayonnaise
  • 5 tsp sweet chilli sauce

Instructions

  1. Preheat the oven to 200°C (400°F) and line a baking tray with parchment paper.
  2. Cut the chicken breasts into nugget-sized pieces.
  3. In a bowl, mix the Greek yoghurt with paprika, garlic powder, salt, and pepper.
  4. In another bowl, combine panko breadcrumbs and grated parmesan.
  5. Coat each chicken piece in the yogurt mixture, then roll in the breadcrumb mixture to cover completely.
  6. Place the coated nuggets on the prepared tray and lightly brush or spray with olive oil.
  7. Bake for 15–20 minutes, flipping halfway, until golden brown and cooked through. Alternatively, fry in olive oil until golden and cooked.
  8. Prepare the honey mustard dip by mixing Greek yoghurt, honey, and mustard in a small bowl.
  9. Prepare the sweet chilli mayo by mixing mayonnaise and sweet chilli sauce until smooth.
  10. Serve the chicken nuggets warm with both dips.

Notes

  • For extra crispiness, toast the panko breadcrumbs lightly before coating.
  • Use skinless chicken breasts for a leaner version.
  • These nuggets can be frozen before baking; bake straight from frozen, adding a few extra minutes.
  • Adjust spice levels in the coating according to preference.
