- 4 boneless skinless chicken thighs
- 1 cup buttermilk
- 2 teaspoons hot sauce
- 1 ½ cups all-purpose flour
- ¼ cup cornstarch
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon salt
- 1 teaspoon black pepper
- Vegetable oil, for frying
- 4 brioche buns
- 4 tablespoons mayonnaise
- 1 cup shredded lettuce
Instructions
- Heat oil in a heavy skillet or Dutch oven to 350°F.
- In a bowl, mix buttermilk and hot sauce. Add chicken and marinate for at least 1 hour.
- In another bowl, combine flour, cornstarch, paprika, garlic powder, onion powder, salt, and pepper.
- Remove chicken from marinade and dredge in flour mixture. Press firmly to coat and let rest for 15 minutes on a rack.
- Fry chicken for 5–6 minutes per side or until golden brown and cooked through. Transfer to a cooling rack.
- Toast brioche buns in a skillet until golden.
- Spread mayo on buns, add shredded lettuce, then top with fried chicken. Cap with the top bun and serve hot.
