- 1 pound sirloin steak, cut into cubes
- 3 cups cooked white rice, chilled
- 2 large eggs, lightly beaten
- 3 tablespoons soy sauce
- 1 teaspoon sesame oil
- 2 tablespoons vegetable oil
- 3 cloves garlic, minced
- 1 teaspoon fresh ginger, grated
- 3 stalks green onions, chopped
- 1 small zucchini, sliced
- 1 medium onion, sliced
- Salt and pepper, to taste
Instructions
- Heat a large skillet or wok over medium-high heat until hot.
- Mix soy sauce, sesame oil, garlic, and ginger in a small bowl and set aside.
- Add vegetable oil to the pan and sear steak cubes for 2–3 minutes per side until golden brown. Remove and set aside.
- Sauté onion and zucchini in the same pan until tender. Push to one side, add eggs, and scramble gently. Mix everything together.
- Add chilled rice to the pan and stir-fry until heated through. Pour in sauce and toss well.
- Return steak to the pan, sprinkle green onions, and stir until combined.
- Serve hot with optional soy sauce on the side.
Notes
- Use day-old rice for best texture.
- Pat steak dry before searing for better browning.
- Cook in batches if needed to avoid overcrowding.
