Gluten-Free Graham Crackers
- 2 cups almond flour
- 1/2 cup arrowroot flour or cornstarch
- 2 tbsp coconut sugar
- 1 tsp cinnamon
- 1 egg, beaten
- 6 tbsp coconut oil, softened
- Pinch of salt
Honey Marshmallows (or store-bought)
- 1/2 cup water, divided
- 1 tbsp unflavored gelatin (or vegan gelatin if vegan)
- 1/2 cup honey (or maple syrup or agave syrup if vegan)
- 2 tsp vanilla extract
- Pinch of salt
Chocolate Coating
- 10 oz dark chocolate chips (use dairy-free or refined sugar-free if preferred)
- 1 tsp coconut oil
Instructions
- Make the graham crackers: Preheat oven to 350°F (175°C). In a bowl, mix almond flour, arrowroot flour, coconut sugar, cinnamon, and salt. Stir in beaten egg and coconut oil until dough forms. Roll dough between parchment paper and cut into cracker shapes. Bake for 10–12 minutes until golden and crisp. Let cool completely.
- Make the marshmallows: Sprinkle gelatin over 1/4 cup water in a mixing bowl. In a saucepan, combine honey (or alternative) with remaining 1/4 cup water. Bring to a simmer and cook for 2–3 minutes. Slowly pour the hot mixture into the gelatin while beating with a mixer on high speed. Add vanilla and salt, then whip until fluffy (about 8–10 minutes).
- Assemble the pies: Spread marshmallow filling between two graham crackers to make sandwiches. Let set for at least 15 minutes.
- Prepare the chocolate coating: Melt chocolate chips with coconut oil in a heatproof bowl over simmering water or in short microwave intervals. Stir until smooth.
- Coat the moon pies: Dip each sandwich into the melted chocolate, coating evenly. Place on a parchment-lined tray.
- Refrigerate until chocolate is set. Enjoy!
