- 1/2 cup cottage cheese
- 2 large eggs
- 1/4 cup honey or maple syrup
- 1 teaspoon vanilla extract
- 1/4 cup unsweetened cocoa powder
- 1/4 cup oat flour (or blended oats)
- 1 scoop chocolate protein powder (about 30g)
- 1/2 teaspoon baking powder
- Pinch of salt
- 1/4 cup dark chocolate chips or chunks (optional)
Instructions
- Preheat oven to 350°F (175°C) and line a small 8×8-inch baking pan with parchment paper or lightly grease it.
- In a blender or food processor, blend cottage cheese, eggs, honey (or maple syrup), and vanilla until smooth.
- Add cocoa powder, oat flour, protein powder, baking powder, and salt. Blend again until just combined.
- Fold in the chocolate chips if using.
- Pour the batter into the prepared pan and spread evenly.
- Bake for 18–22 minutes or until a toothpick inserted comes out with a few moist crumbs.
- Let cool completely before slicing into squares. Store in the fridge for a firmer texture.

- Use lactose-free cottage cheese if needed for dietary restrictions.
- Swap oat flour with almond flour for a lower-carb version.
- These brownies taste even better after chilling in the fridge for a few hours.
