Description

These Healthy Copycat Thin Mints are a wholesome twist on the classic Girl Scout cookie. Made with clean ingredients, they’re vegan, paleo, and gluten-free, with a rich chocolate coating and refreshing peppermint flavor—perfect for guilt-free snacking!


Ingredients

  • For the Cookies:
  • 1 cup almond flour
  • 1/4 cup cocoa powder
  • 2 tablespoons coconut flour
  • 1/4 cup maple syrup
  • 2 tablespoons melted coconut oil
  • 1/2 teaspoon peppermint extract
  • 1/4 teaspoon salt
  • For the Chocolate Coating:
  • 1 cup dairy-free dark chocolate chips or chopped chocolate
  • 1 tablespoon coconut oil
  • 1/2 teaspoon peppermint extract

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, mix almond flour, cocoa powder, coconut flour, and salt. Add maple syrup, coconut oil, and peppermint extract. Stir until a dough forms.
  3. Roll out the dough between two sheets of parchment paper to about 1/8-inch thickness. Cut into small circles using a cookie cutter or bottle cap.
  4. Place cookies on prepared baking sheet and bake for 10–12 minutes. Let cool completely.
  5. In a microwave or double boiler, melt chocolate chips with coconut oil. Stir in peppermint extract.
  6. Dip cooled cookies into chocolate mixture, coating completely. Let excess drip off, then place on a parchment-lined tray.
  7. Refrigerate or freeze until chocolate is set, about 15–20 minutes. Store in fridge or freezer.

Notes

  • For a crisper cookie, roll dough thinner and bake a minute longer.
  • Use refined coconut oil for no coconut flavor, or unrefined for a hint of it.
  • Store cookies in an airtight container in the freezer for a classic Thin Mint experience.
