These Healthy Copycat Thin Mints are a wholesome twist on the classic Girl Scout cookie. Made with clean ingredients, they’re vegan, paleo, and gluten-free, with a rich chocolate coating and refreshing peppermint flavor—perfect for guilt-free snacking!

- For the Cookies:
- 1 cup almond flour
- 1/4 cup cocoa powder
- 2 tablespoons coconut flour
- 1/4 cup maple syrup
- 2 tablespoons melted coconut oil
- 1/2 teaspoon peppermint extract
- 1/4 teaspoon salt
- For the Chocolate Coating:
- 1 cup dairy-free dark chocolate chips or chopped chocolate
- 1 tablespoon coconut oil
- 1/2 teaspoon peppermint extract
Instructions
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, mix almond flour, cocoa powder, coconut flour, and salt. Add maple syrup, coconut oil, and peppermint extract. Stir until a dough forms.
- Roll out the dough between two sheets of parchment paper to about 1/8-inch thickness. Cut into small circles using a cookie cutter or bottle cap.
- Place cookies on prepared baking sheet and bake for 10–12 minutes. Let cool completely.
- In a microwave or double boiler, melt chocolate chips with coconut oil. Stir in peppermint extract.
- Dip cooled cookies into chocolate mixture, coating completely. Let excess drip off, then place on a parchment-lined tray.
- Refrigerate or freeze until chocolate is set, about 15–20 minutes. Store in fridge or freezer.
Notes
- For a crisper cookie, roll dough thinner and bake a minute longer.
- Use refined coconut oil for no coconut flavor, or unrefined for a hint of it.
- Store cookies in an airtight container in the freezer for a classic Thin Mint experience.
