- 1 cup Greek yogurt
- 3/4 cup coconut sugar

- 1 tablespoon cornstarch
- 1/4 teaspoon salt
- 3 large eggs
- 1/4 cup almond milk
- 1 1/2 cups chocolate graham crackers, crushed
- 1/4 cup melted coconut oil
Instructions
- Preheat oven to 325°F. Line the bottom of a 9-inch springform pan with parchment paper and wrap the outside with foil.
- In a large bowl, beat cream cheese until smooth. Add coconut sugar, Greek yogurt, cocoa powder, and vanilla, mixing until creamy.
- Beat in the eggs one at a time, then stir in melted chocolate and almond milk. Fold in cornstarch and salt.
- Mix crushed graham crackers with melted coconut oil in a separate bowl and press firmly into the pan.
- Pour chocolate filling over the crust and smooth the top.
- Place the pan in a larger dish, add hot water halfway up the sides, and bake for 50–60 minutes.
- Turn off oven, let sit with door ajar for 1 hour, then refrigerate at least 4 hours or overnight.
- Slice with a hot knife and serve as is or with toppings.
