- 4 slices of sourdough or artisan bread
- 1 tablespoon butter, softened
- 1 apple (Granny Smith or Honeycrisp), thinly sliced
- 4 slices sharp cheddar cheese
- 2 slices Havarti or Swiss cheese
- 1 tablespoon Dijon mustard (optional)
- Pinch of black pepper (optional)
Instructions
- Preheat a skillet or griddle over medium heat.
- Butter one side of each bread slice. Place 2 slices buttered-side-down on a cutting board.
- Spread Dijon mustard (if using) on the unbuttered side of the bread. Layer with 2 slices of cheddar, apple slices, a pinch of black pepper (if desired), and Havarti or Swiss cheese.
- Top with the remaining bread slices, buttered-side-up.
- Transfer sandwiches to the hot skillet. Cook for 3–4 minutes per side or until the bread is golden brown and the cheese is melted.
- Remove, slice in half, and serve immediately while warm and gooey.
