- 2 cups egg noodles
- 2 medium carrots, diced
- 2 stalks celery, chopped
- 1 medium onion, chopped
- 1 can (400 grams) diced tomatoes
- 4 cups beef broth
- 2 tablespoons tomato paste
- 3 garlic cloves
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried Italian herbs
Instructions
- Heat a large soup pot over medium heat.
- Add olive oil and ground beef, cooking and breaking it apart until browned.
- Add chopped onion, carrots, and celery, cooking until softened.
- Stir in garlic, tomato paste, diced tomatoes, beef broth, salt, black pepper, and dried herbs.
- Bring to a gentle boil, then reduce heat and simmer for 20 minutes.
- Add egg noodles and cook until tender.
- Taste, adjust seasoning if needed, and serve warm.
Notes
- Add noodles toward the end to prevent them from becoming too soft.
- For deeper flavor, let the soup sit for a few minutes before serving.
