Ingredients

  • 450 grams ground beef
  • 2 cups egg noodles
  • 2 medium carrots, diced
  • 2 stalks celery, chopped
  • 1 medium onion, chopped
  • 1 can (400 grams) diced tomatoes
  • 4 cups beef broth
  • 2 tablespoons tomato paste
  • 3 garlic cloves
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried Italian herbs

Instructions

  1. Heat a large soup pot over medium heat.
  2. Add olive oil and ground beef, cooking and breaking it apart until browned.
  3. Add chopped onion, carrots, and celery, cooking until softened.
  4. Stir in garlic, tomato paste, diced tomatoes, beef broth, salt, black pepper, and dried herbs.
  5. Bring to a gentle boil, then reduce heat and simmer for 20 minutes.
  6. Add egg noodles and cook until tender.
  7. Taste, adjust seasoning if needed, and serve warm.
