- 1 lb ground beef
- 1 small onion, diced
- 1 (30 oz) package frozen shredded hashbrowns, thawed
- 1 can (10.5 oz) cream of mushroom soup
- 1 can (10.5 oz) cream of cheddar soup
- 2 cups shredded cheddar cheese, divided
- 1/2 cup sour cream
- 1/4 cup milk
- Salt and pepper to taste
Instructions
- Preheat oven to 350°F (175°C).
- In a skillet, cook ground beef and diced onion over medium heat until beef is browned and onion is soft. Drain excess fat.
- In a large bowl, combine cream of mushroom soup, cream of cheddar soup, sour cream, milk, salt, and pepper.
- Add thawed hashbrowns, cooked beef mixture, and 1 1/2 cups of shredded cheddar cheese. Mix well.
- Spread mixture evenly into a greased 9×13-inch baking dish.
- Top with remaining 1/2 cup shredded cheddar cheese.
- Bake uncovered for 45 minutes or until casserole is bubbly and cheese is melted and golden.
- Let cool slightly before serving.
Notes
- For extra flavor, add chopped green chilies or diced bell peppers.
- Use cream of chicken soup as an alternative to mushroom or cheddar.
- Leftovers can be refrigerated and reheated easily.
