- 1 pound lean ground beef
- 3 medium russet potatoes, peeled and diced small
- 1 medium yellow onion, chopped
- 2 cloves garlic, minced
- 1 cup beef broth
- 1 tablespoon Worcestershire sauce
- 1 teaspoon paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon olive oil
- 1 tablespoon chopped fresh parsley
Instructions
- Heat a large skillet over medium heat.
- In a small bowl, stir together the beef broth, Worcestershire sauce, paprika, salt, and black pepper.
- Add olive oil to the skillet, then add the diced potatoes and chopped onion. Cook for 8 to 10 minutes, stirring occasionally, until the potatoes begin to soften and turn golden in spots.
- Add the ground beef and minced garlic. Cook for 5 to 7 minutes, breaking up the beef, until browned and no longer pink.
- Pour in the broth mixture and stir well. Cover and cook for 8 to 10 minutes, stirring once or twice, until the potatoes are tender and most of the liquid is absorbed.
- Remove the lid and cook for 2 to 3 more minutes for a slightly drier finish, if desired.
- Sprinkle with chopped fresh parsley and serve hot.
Notes
- Dice the potatoes evenly so they cook at the same rate.
- Use a large skillet to help the potatoes brown instead of steam.
- Add shredded cheddar on top at the end for a cheesy variation.
- Leftovers can be refrigerated for up to 4 days and reheated in a skillet or microwave.
