Description

A cozy one-skillet meal made with lean ground beef, diced potatoes, onion, garlic, and a savory broth mixture. This comforting dinner is hearty, budget-friendly, and perfect for busy nights.


Ingredients

  • 1 pound lean ground beef
  • 3 medium russet potatoes, peeled and diced small
  • 1 medium yellow onion, chopped
  • 2 cloves garlic, minced
  • 1 cup beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1 tablespoon chopped fresh parsley

Instructions

  1. Heat a large skillet over medium heat.
  2. In a small bowl, stir together the beef broth, Worcestershire sauce, paprika, salt, and black pepper.
  3. Add olive oil to the skillet, then add the diced potatoes and chopped onion. Cook for 8 to 10 minutes, stirring occasionally, until the potatoes begin to soften and turn golden in spots.
  4. Add the ground beef and minced garlic. Cook for 5 to 7 minutes, breaking up the beef, until browned and no longer pink.
  5. Pour in the broth mixture and stir well. Cover and cook for 8 to 10 minutes, stirring once or twice, until the potatoes are tender and most of the liquid is absorbed.
  6. Remove the lid and cook for 2 to 3 more minutes for a slightly drier finish, if desired.
  7. Sprinkle with chopped fresh parsley and serve hot.

Notes

  • Dice the potatoes evenly so they cook at the same rate.
  • Use a large skillet to help the potatoes brown instead of steam.
  • Add shredded cheddar on top at the end for a cheesy variation.
  • Leftovers can be refrigerated for up to 4 days and reheated in a skillet or microwave.
