- 2 medium sweet potatoes, peeled and diced
- 1/2 cup low-sodium chicken broth

Instructions
- Preheat oven to 375°F (190°C). Lightly grease a 9×9-inch baking dish.
- Heat olive oil in a large skillet over medium heat. Add onion and garlic and sauté for 2–3 minutes until softened.
- Add ground turkey, breaking it up with a spoon, and cook until browned and cooked through. Season with paprika, cumin, thyme, salt, and pepper.
- Add diced sweet potatoes and chicken broth. Stir to combine, then cover and simmer for 10–12 minutes, or until sweet potatoes are just tender.
- Transfer mixture to the prepared baking dish. Top with shredded cheese if using.
- Bake for 15–20 minutes, or until the top is bubbly and golden.
- Garnish with fresh parsley and serve warm.
