- 2 medium carrots, sliced
- 3 medium potatoes, diced
- 1 cup green peas

- 4 cups beef broth
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried thyme
Instructions
- Place a large pot on medium heat and let it warm up.
- Add olive oil, then sauté onion and garlic until fragrant.
- Add ground beef and cook until browned, breaking it apart as it cooks.
- Stir in tomato paste, then add carrots, potatoes, beef broth, salt, black pepper, and dried thyme.
- Bring to a gentle simmer and cook for 25 minutes until vegetables are tender.
- Add green peas and cook for another 5 minutes.
