Ground Beef Doritos Casserole is a crowd-pleasing comfort dish layered with seasoned beef, creamy cheese, salsa, and crunchy Doritos. This Tex-Mex inspired bake is easy to throw together and bursting with bold flavors, making it perfect for weeknight dinners or potlucks.

Ingredients

Scale
  • 1 lb ground beef
  • 1 small onion, chopped
  • 1 packet taco seasoning
  • 1/2 cup water
  • 1 can (10.5 oz) cream of mushroom soup
  • 1/2 cup sour cream
  • 1 cup salsa
  • 2 cups shredded cheddar cheese (divided)
  • 1 bag (9.75 oz) nacho cheese Doritos, slightly crushed
  • Optional toppings: chopped green onions, sliced jalapeños, diced tomatoes

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large skillet over medium heat, cook the ground beef and chopped onion until beef is browned and onions are soft. Drain excess fat.
  3. Stir in taco seasoning and water. Simmer for 2–3 minutes until thickened.
  4. Add cream of mushroom soup, sour cream, and salsa. Mix until well combined.
  5. In a 9×13-inch baking dish, spread a layer of crushed Doritos on the bottom.
  6. Spoon half the beef mixture over the chips, then sprinkle 1 cup of cheese.
  7. Repeat with another layer of Doritos, beef mixture, and the remaining cheese on top.
  8. Bake uncovered for 20–25 minutes, or until cheese is melted and bubbly.
  9. Top with optional garnishes and serve warm.

Notes

  • Use ground turkey or chicken for a lighter version.
  • Add a can of drained corn or black beans for extra texture and flavor.
  • Use pepper jack or Mexican blend cheese for a spicier kick.
  • Leftovers reheat well and can be frozen for up to a month.
