Ground Beef Doritos Casserole is a crowd-pleasing comfort dish layered with seasoned beef, creamy cheese, salsa, and crunchy Doritos. This Tex-Mex inspired bake is easy to throw together and bursting with bold flavors, making it perfect for weeknight dinners or potlucks.

- 1 lb ground beef
- 1 small onion, chopped
- 1 packet taco seasoning
- 1/2 cup water
- 1 can (10.5 oz) cream of mushroom soup
- 1/2 cup sour cream
- 1 cup salsa
- 2 cups shredded cheddar cheese (divided)
- 1 bag (9.75 oz) nacho cheese Doritos, slightly crushed
- Optional toppings: chopped green onions, sliced jalapeños, diced tomatoes
Instructions
- Preheat oven to 350°F (175°C).
- In a large skillet over medium heat, cook the ground beef and chopped onion until beef is browned and onions are soft. Drain excess fat.
- Stir in taco seasoning and water. Simmer for 2–3 minutes until thickened.
- Add cream of mushroom soup, sour cream, and salsa. Mix until well combined.
- In a 9×13-inch baking dish, spread a layer of crushed Doritos on the bottom.
- Spoon half the beef mixture over the chips, then sprinkle 1 cup of cheese.
- Repeat with another layer of Doritos, beef mixture, and the remaining cheese on top.
- Bake uncovered for 20–25 minutes, or until cheese is melted and bubbly.
- Top with optional garnishes and serve warm.
Notes
- Use ground turkey or chicken for a lighter version.
- Add a can of drained corn or black beans for extra texture and flavor.
- Use pepper jack or Mexican blend cheese for a spicier kick.
- Leftovers reheat well and can be frozen for up to a month.
