These grilled BBQ chicken sandwiches are layered with melted mozzarella, tangy barbecue sauce, and fresh toppings on a toasted bun—perfect for summer cookouts or an easy dinner night.

- 4 boneless, skinless chicken breasts
- 1 cup barbecue sauce (your favorite variety)
- 1 tablespoon olive oil
- Salt and pepper, to taste
- 4 slices mozzarella cheese
- 4 sandwich buns or brioche rolls
- 1 cup shredded lettuce
- 1 tomato, sliced
- 1/2 red onion, thinly sliced (optional)
- Butter, for toasting buns (optional)
Instructions
- Preheat grill to medium-high heat. Brush chicken breasts with olive oil and season with salt and pepper.
- Grill chicken for 5–7 minutes per side, or until internal temperature reaches 165°F (75°C).
- During the last 2 minutes of grilling, brush both sides of the chicken with barbecue sauce and place a slice of mozzarella cheese on each breast. Close the grill lid to melt the cheese.
- Optional: Butter the buns and toast them cut-side down on the grill for 1–2 minutes until golden.
- Assemble the sandwiches: place grilled chicken on the bottom bun, top with lettuce, tomato, onion (if using), and additional barbecue sauce if desired. Cover with top bun.
- Serve warm with chips, fries, or a side salad.

- Substitute grilled thighs for extra juiciness.
- Use smoked mozzarella or provolone for a twist.
- Great with a tangy slaw instead of lettuce for added crunch.
- Can be made on a grill pan or stovetop if grill is unavailable.
