Description

Grilled Honey Mustard Chicken Tenders are juicy and flavorful, marinated in a sweet and tangy honey mustard sauce with fresh rosemary and lemon. Quick to prepare and perfect for a healthy weeknight dinner or outdoor grilling.


Ingredients

  • ¼ cup coarse ground Dijon mustard
  • ½ shallot, diced
  • 3 tablespoons honey
  • 2 tablespoons olive oil
  • 2 tablespoons chopped fresh rosemary
  • 1 tablespoon freshly squeezed lemon juice
  • Kosher salt and freshly ground black pepper, to taste
  • 1 ½ pounds chicken tenderloins
  • 1 tablespoon canola oil, for grilling

Instructions

  1. In a small bowl, whisk together Dijon mustard, diced shallot, honey, olive oil, rosemary, lemon juice, salt, and black pepper to make the marinade.
  2. Place chicken tenderloins in a large resealable bag or shallow dish and pour the marinade over them. Toss to coat evenly.
  3. Marinate in the refrigerator for at least 30 minutes, preferably 1-2 hours for deeper flavor.
  4. Preheat a grill or grill pan over medium-high heat and brush with canola oil to prevent sticking.
  5. Grill chicken tenderloins for 3-4 minutes per side, or until fully cooked and internal temperature reaches 165°F (74°C).
  6. Remove from grill and let rest for 5 minutes before serving.

Notes

  • Can also bake chicken tenders at 400°F (200°C) for 15-20 minutes if a grill is unavailable.
  • Fresh rosemary adds a bright herbal flavor; dried rosemary can be used in a pinch but use half the amount.
  • Serve with a side of roasted vegetables or a light salad for a complete meal.
  • Leftover chicken can be sliced for sandwiches or salads the next day.
