Description

A fresh and vibrant green goddess salad made with finely chopped cabbage, crisp cucumbers, scallions, and a creamy herb dressing blended with basil, spinach, lemon, and parmesan. Crunchy walnuts and bright citrus notes make every bite refreshing and satisfying.

  • 4 cups finely chopped green cabbage (about 1/2 medium head)
  • 2 small cucumbers, finely diced
  • 3 scallions, thinly sliced
  • 1 cup packed fresh basil leaves
  • 1 cup packed fresh spinach leaves
  • 2 garlic cloves
  • 2 tablespoons fresh lemon juice (from 1 lemon)
  • 1/4 cup olive oil
  • 2 tablespoons rice vinegar
  • 1/4 cup finely chopped walnuts
  • 1/4 cup grated parmesan cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper

Instructions

  1. Set up your blender or food processor along with a cutting board and sharp knife.
  2. Add basil, spinach, garlic, lemon juice, olive oil, rice vinegar, walnuts, grated parmesan, salt, and black pepper to the blender. Blend until smooth and creamy.
  3. Place the finely chopped cabbage, diced cucumbers, and sliced scallions in a large mixing bowl.
  4. Pour the creamy green dressing over the vegetables.
  5. Toss thoroughly and gently massage the dressing into the cabbage for 1 to 2 minutes until evenly coated.
  6. Taste and adjust salt or lemon juice if needed. Let the salad rest for 10 minutes to allow flavors to meld.
  7. Serve chilled or at room temperature and enjoy.
