- 2 small cucumbers, finely diced
- 3 scallions, thinly sliced
- 1 cup packed fresh basil leaves
- 1 cup packed fresh spinach leaves
- 2 garlic cloves
- 2 tablespoons fresh lemon juice (from 1 lemon)
- 1/4 cup olive oil
- 2 tablespoons rice vinegar
- 1/4 cup finely chopped walnuts
- 1/4 cup grated parmesan cheese
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
Instructions
- Set up your blender or food processor along with a cutting board and sharp knife.
- Add basil, spinach, garlic, lemon juice, olive oil, rice vinegar, walnuts, grated parmesan, salt, and black pepper to the blender. Blend until smooth and creamy.
- Place the finely chopped cabbage, diced cucumbers, and sliced scallions in a large mixing bowl.
- Pour the creamy green dressing over the vegetables.
- Toss thoroughly and gently massage the dressing into the cabbage for 1 to 2 minutes until evenly coated.
- Taste and adjust salt or lemon juice if needed. Let the salad rest for 10 minutes to allow flavors to meld.
