- 1 tbsp butter
- 1 large yellow onion, finely chopped
- 1/2 tsp salt
- 1/2 tsp sugar (optional, to enhance caramelization)
- 1 1/2 cups plain full-fat Greek yogurt
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1 tbsp lemon juice
- Salt and pepper to taste
- For crispy shallots:
- 2 shallots, thinly sliced
- 1/4 cup neutral oil (like canola or vegetable)
- Pinch of salt
Instructions
- Heat olive oil and butter in a skillet over medium heat. Add chopped onion, salt, and sugar. Cook, stirring often, until deeply golden and caramelized, about 25–30 minutes. Set aside to cool.
- In a bowl, mix Greek yogurt, garlic powder, onion powder, lemon juice, salt, and pepper. Stir in the cooled caramelized onions. Chill for at least 30 minutes for flavors to meld.
- To make crispy shallots: Heat oil in a small pan over medium heat. Add sliced shallots and cook, stirring frequently, until golden brown and crisp, 6–8 minutes. Remove with a slotted spoon and drain on paper towels. Season with a pinch of salt.
- Top the dip with crispy shallots before serving. Serve with chips, crackers, or fresh veggies.
