- 3 cups cooked Butter Beans (or 2 cans, drained and rinsed)
- 1/4 cup Olive Oil
- 1 large Yellow Onion, finely chopped
- 4 Garlic Cloves, minced
- 1 medium Carrot, finely diced
- 1 Celery Stalk, diced
- 1 can (14 oz) Chopped Tomatoes
- 1 tablespoon Tomato Paste
- 1 teaspoon dried Oregano
- 1 Bay Leaf
- 1/4 cup Fresh Parsley, chopped
- 1 teaspoon Salt
- 1/2 teaspoon Black Pepper
- Optional: Feta Cheese for topping
Instructions
- Preheat your oven to 375°F (190°C) and grease a large baking dish with olive oil.
- In a large bowl, combine the beans, chopped tomatoes, tomato paste, onion, garlic, carrot, celery, oregano, bay leaf, salt, and pepper.
- Pour the mixture into the greased baking dish and drizzle with olive oil.
- Spread the ingredients evenly and optionally add cherry tomatoes or herbs on top.
- Cover with foil and bake for 45 minutes, then uncover and bake an additional 15 to 20 minutes until bubbling and lightly browned.
- Remove from oven, discard bay leaf, sprinkle with parsley and optional feta.
- Let rest for 10 minutes before serving warm with crusty bread.

- Use good-quality tomatoes for a rich sauce.
- Rinse canned beans thoroughly to reduce saltiness.
- Allowing the dish to rest improves flavor melding.
- For extra depth, briefly sauté vegetables before mixing.
