Description

A traditional Greek comfort dish featuring creamy butter beans baked in a rich tomato sauce with herbs and olive oil. Perfect for cozy dinners or Mediterranean-inspired spreads.


Ingredients

  • 3 cups cooked Butter Beans (or 2 cans, drained and rinsed)
  • 1/4 cup Olive Oil
  • 1 large Yellow Onion, finely chopped
  • 4 Garlic Cloves, minced
  • 1 medium Carrot, finely diced
  • 1 Celery Stalk, diced
  • 1 can (14 oz) Chopped Tomatoes
  • 1 tablespoon Tomato Paste
  • 1 teaspoon dried Oregano
  • 1 Bay Leaf
  • 1/4 cup Fresh Parsley, chopped
  • 1 teaspoon Salt
  • 1/2 teaspoon Black Pepper
  • Optional: Feta Cheese for topping

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a large baking dish with olive oil.
  2. In a large bowl, combine the beans, chopped tomatoes, tomato paste, onion, garlic, carrot, celery, oregano, bay leaf, salt, and pepper.
  3. Pour the mixture into the greased baking dish and drizzle with olive oil.
  4. Spread the ingredients evenly and optionally add cherry tomatoes or herbs on top.
  5. Cover with foil and bake for 45 minutes, then uncover and bake an additional 15 to 20 minutes until bubbling and lightly browned.
  6. Remove from oven, discard bay leaf, sprinkle with parsley and optional feta.
  7. Let rest for 10 minutes before serving warm with crusty bread.

  • Use good-quality tomatoes for a rich sauce.
  • Rinse canned beans thoroughly to reduce saltiness.
  • Allowing the dish to rest improves flavor melding.
  • For extra depth, briefly sauté vegetables before mixing.
