Description

Crispy on the outside, tender and buttery on the inside, this Gordon Ramsay-style salmon is seared to perfection and paired with creamy mashed potatoes and bright asparagus for a stunning yet easy meal.


Ingredients

  • 2 salmon fillets (skin-on)
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons unsalted butter
  • 2 garlic cloves, smashed
  • 2 sprigs fresh thyme
  • 1 bunch asparagus
  • 1 pound Yukon gold potatoes
  • 1 lemon, sliced into wedges

Instructions

  1. Heat a skillet over medium-high heat.
  2. Season salmon fillets with salt and pepper.
  3. Add olive oil to the pan and place salmon skin-side down. Press lightly for even sear.
  4. Sear for 4–5 minutes without moving, then flip.
  5. Add butter, garlic, and thyme. Baste for 2–3 minutes.
  6. Boil potatoes until tender, then mash with butter and season to taste.
  7. Sauté asparagus with a bit of olive oil and salt until crisp-tender.
  8. Plate salmon with mashed potatoes and asparagus, garnish with lemon wedges and pan juices.

Notes

  • Let salmon come to room temperature before cooking for even results.
  • Do not overcrowd the pan to maintain a good sear.
  • Use fresh herbs for best flavor.
  • Basting the salmon adds richness and moisture.
