Description
Crispy on the outside, tender and buttery on the inside, this Gordon Ramsay-style salmon is seared to perfection and paired with creamy mashed potatoes and bright asparagus for a stunning yet easy meal.

- 2 salmon fillets (skin-on)
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons unsalted butter
- 2 garlic cloves, smashed
- 2 sprigs fresh thyme
- 1 bunch asparagus
- 1 pound Yukon gold potatoes
- 1 lemon, sliced into wedges
Instructions
- Heat a skillet over medium-high heat.
- Season salmon fillets with salt and pepper.
- Add olive oil to the pan and place salmon skin-side down. Press lightly for even sear.
- Sear for 4–5 minutes without moving, then flip.
- Add butter, garlic, and thyme. Baste for 2–3 minutes.
- Boil potatoes until tender, then mash with butter and season to taste.
- Sauté asparagus with a bit of olive oil and salt until crisp-tender.
- Plate salmon with mashed potatoes and asparagus, garnish with lemon wedges and pan juices.
Notes
- Let salmon come to room temperature before cooking for even results.
- Do not overcrowd the pan to maintain a good sear.
- Use fresh herbs for best flavor.
- Basting the salmon adds richness and moisture.
